Palomino Fino

Hailing from the Andalucia region of southern Spain, Palomino is a white grape variety most commonly used in Sherry wine production. The grape produces neutral wines with low levels of alcohol and acidity, rendering them perfect for fortified winemaking. Palomino thrives in chalky soils and is often aged under a layer of flor and using solera systems. On the Canary Islands, Palomino, locally called Listan Blanco, is vinified into dry, saline-tinged still wines.
