Pedro Ximénez

Pedro Ximénez, also known as PX, is a Spanish grape variety most commonly used in the fortified wine productions of Jerez (Sherry) and Montilla-Moriles. In the latter, Pedro Ximénez-based wines are often dark-hued and very sweet, and are made even more concentrated through drying out the grapes on mats in the sun prior to vinification. These wines are then fortified and aged in solera, leading to intensely concentrated bottles with notes of raisins, molasses, and brown sugar.
