Saperavi is a dark-skinned, highly acidic grape variety native to the Republic of Georgia. It is one of the few teinturier red grapes, meaning that both its skins and flesh are pigmented. Saperavi-based wines are generally aromatic and slightly astringent; it is one of the few teinturier grapes commonly vinified varietally. Saperavi can withstand harsh weather conditions, and although it is synonymous with Georgia’s Kakheti region, it can now be found all over eastern Georgia.
