Aligoté, a crossing of Pinot Noir and Gouais Blanc, ripens early and produces high-acid wines marked by flavors of apple, white flowers, and flint. Although it has long lived in the shadows of Burgundy’s more popular white grape, Chardonnay, Aligoté is finally getting the love and attention it deserves. The grape is used in both still and sparkling wine production, and is traditionally known for its role in the region’s famed Kir cocktail.
